Chocolate Chip Muffins Recipe

Hey Lovelies!

Happy new month btw! I don’t know if it’s just me, but isn’t this year FLYING!?! I can’t believe it’s May already! 2021, please slow down lol.

Anyway, today I’m going to share a yummy chocolate chip muffin recipe with you guys. I’ve been using this recipe for YEARS and every time I’ve used it, the muffins have always been a hit here at home. The recipe is from a book called Easy Home Baking by Carole Clements, I don't know her personally but shout out to her! :)

I’ve always been passionate about baking and it’s something I like doing for fun. You may wonder why I may be sharing a recipe in a mostly Faith-based blog space, but I believe in not putting God in a box and flowing freely with Him. At times we ignore or demean some of the ideas God lays in our hearts because they may seem unholy or not ‘churchy’ enough, but God is creative enough to use even these things to make an impact and set our sights on Him. So, don’t limit God, He can use anything and everything to lead us to Him.

Anyway, let’s jump right into the recipe!


CHOCOLATE CHIP MUFFINS RECIPE


INGRIDIENTS

*makes 10

· ½ a cup (115g) of margarine/butter

· 1/3 cup (70g) of caster sugar

· 1/8 cup (30g) of dark brown sugar

· 2 eggs, room temperature

· 1 cup (215g) plain flour

· 1 tsp baking powder or bicarbonate of soda works well too

· ½ cup (125ml) milk

· ½ cup (170g) chocolate chips


SOME POINTS TO NOTE:

· It’s advisable to use room temperature ingredients as they easily incorporate with each other during the procedure. For example, if using butter you can portion out the amount needed and set it in a cool dry place the night before you bake, so that the next morning it’s room temperature. You can do the same for the eggs as well. For the milk, you could pop it in the microwave for a few seconds till lukewarm.

· I personally prefer cakes which have a balanced sweetness. To ensure this, I usually use half the amount of sugar they indicate in the recipe, plus you’ll get extra sweetness from the chocolate chips. In my case I used 1/3 a cup of normal sugar and was able to get a good balance. If you are wondering what caster sugar is, it’s basically normal sugar with a finer texture and dark brown sugar is darker than normal sugar and has a coarser texture. Both can be found in the supermarkets in the section where they keep all the baking stuff.

· In the recipe and you’ll see, one of the instructions is to sift the flour and baking powder together twice. This ensures the baking powder is distributed evenly in the mixture, so as the muffins bake, they rise evenly. Sifting also ensures the muffins turn out light and airy. If you don’t have a sifter like me, you can use a large sieve, it will get the job done.


PROCEDURE

1. Preheat oven to 190◦C/ 375◦F. Grease 10 muffin cups or use paper cases.

2. Cream butter and sugar (if using both sugars, add them both at the same time) until light and fluffy. You could use an electric mixer if you have one, or a whisk or even a wooden spoon. Beat in the eggs one at a time and incorporate well. Set aside.

3. Sift flour and baking powder/bicarbonate twice. Fold in the butter mixture, alternating with the milk. *this means, add a small amount of the butter mixture, mix well, then add milk, mix well, until everything is incorporated together.

4. Divide half the mixture in the muffin cups, sprinkle several chocolate chips on the top, then cover with a spoonful of the remaining batter.

5. Bake for 25 minutes, until lightly colored. Let stand for 5 minutes before turning out. Then serve and enjoy and boom, #yumziesinyourtumzies. :)

Baking is much simpler than you may think, it’s a journey of trial and error and our results may not end up being the same. But try it and remember to have fun!
